Fluffy American Pancakes Recipe

I am guilty of opening up a batter mix sachet that costs just 30p and making up a batch of pancakes or yorkshire puddings. Pancakes are P1s absolute favourite breakfast and seeing as I am actually really enjoying baking and cooking recently, I decided to give some American pancakes a go today. Here’s the recipe for these yummy star shaped American Pancakes:

A delicious fluffy pancake perfect for kids breakfast or as a yummy snack

  1. 3 large Eggs
  2. 115g Plain Flour
  3. 1 heaped teaspoon Baking Powder
  4. 140ml Milk
  1. Separate the egg yolks from the whites into two bowls. Whisk the egg whites until they are a thick stiff texture. If you are doing this by hand it does take a very long time, so I'd advise an electric whisk.
  2. In a different bowl mix together the egg yolks, flour and baking powder together until smooth and creamy.
  3. Plop the thick egg whites into the centre of the batter mix and fold the batter over the top until thoroughly mixed together.
  4. Heat a non-stick frying pan to medium heat. Pour your preferred size of pancake into the centre, I used some special pancake moulds for mine which are silicone.
  5. Heat one side until there are plenty of bubbles on the top. Then flip and cook for around 2 minutes.
  6. Serve with fruit, bacon, chocolate spread or my favourite golden syrup!

I found the hardest part of the recipe was whisking up the egg whites as I don’t have an electric whisk, nor the space to store one. However, I really loved creating these pancakes and I actually think they came out much better than the really thin crepe style pancakes that we usually have. I will be making these more often, especially with the super cool silicone pancake moulds P1 got for Christmas.
