#BLOGMAS Day 23 – A Cheat’s Home Made Mince Pies

We are literally hours away from Christmas now. I’ve spent today tidying up ready for my eldest to celebrate her birthday tomorrow.

Today I thought I’d bring you a recipe that makes creating your own home made mince pies super easy. What’s better is that they are delicious and you’ll definitely earn some points from your guests!

You will need:

  • 1 jar of Mincemeat (I found ours in Lidl)
  • 1 packet of Ready Rolled Shortcrust Pastry
  • Some Butter for greasing
  • Some Milk for glazing
  • 2 different sized Cookie cutters (I used a normal round one slightly bigger than the cake tin and a shaped one for the top)
  • A muffin tray or cupcake tray
  • Pastry Brush
  • Scissors (this is for opening pastry or snipping a slit in the top of your mince pies if you are sealing them entirely)

The Method:

Preheat your oven to 200c if it’s Fan Assisted. Then butter up the insides of your cupcake or muffin tray depending on the size mince pie you are making.

Unroll the pastry. Cut the same amount of bases (the larger circle) and tops (in my case the Christmas trees). Then gently place the larger circles inside the tray and with the end of the pastry brush gently push the pastry into the wells of the tray.

Using a teaspoon fill each base with mincemeat. I prefer a mince pie to have lots of filling so fill to the top, press down gently and level off.

Using the milk brush a small amount of the pastry toppers (the trees) and press them on top carefully. The milk will help to give it a golden glow when it cooks.

Pop the tray in to the oven for about 12-15 minutes. Be careful if you make mini ones as they take much less time, my first batch went very wrong as I forgot to adjust the time to about 8-10 minutes. So I made some new ones that were a normal sized mince pie.

They may not look like the real deal, but honestly they are just as nice if not better. You could sprinkle them with some icing sugar for a more decorative look.
