Last night P2 helped me to cook our first lot of freshly made snacks. As I watched all the sugar, golden syrup and butter melt I did feel slightly nervous and wondered how this was healthy. I did a little research and apparently flapjacks (and obviously fruity oat bars) are packed full of slow releasing energy which is perfect for children when it comes to all the activities they have to participate in each day. Plus, a fantastic healthier way for me to find energy.

- 200g (8oz) Unsalted Butter
- 200g (8oz) Light Soft Brown Sugar
- 140g (6oz) Golden Syrup
- 300g (10oz) Porridge Oats
- 100g (4oz) Dried Chopped Cranberries
- 100g (4oz) Raisins
- 40g (2oz) Sunflower Seeds
- 100g (4oz) Chopped Pecans (Optional)
- Preheat oven to 180c/350F/Gas4.
- Heat the butter, sugar and golden syrup in a saucepan until melted. Stir frequently.
- Add the porridge oats and all other remaining ingredients.
- Spoon mixture evenly into two 20cm (8in) non-stick tins (preferably square). Smooth the top so that it is a flat even mixture in the tin.
- Bake in the oven for 20 minutes or until golden brown. When you take it out of the oven it will still seem "wobbly". Leave to cool for about 5-10 minutes. Cut into bars, roughly 18 in each tin.
- You can then put into two air-tight containers, one for the freezer and one for the cupboard.
- When you come to unfreeze the fruity bars, make sure you leave it for a good few hours at room temperature.

I think the thing to remember about flapjacks is that the portions are so small and they are bulked out with fruit. So not that much butter per portion.
