School holidays when you are a work at home mum is all about balancing everything. I’ve struggled in the first few days to accept the fact I’m getting a million demands in one hour let alone the full day! One particular day had been pretty darn stressful, we’d had yet more bad news for the car and panic set in a bit. I found my patience was running rather thin and we all needed a distraction so I decided to bake. I find baking Mini Syrup Sponges to be pretty easy so I let P2 bake all by herself except the weighin of ingredients. Here’s our recipe.


- 4 Ramekin dishes
- 4 tbsp Golden Syrup
- 125g Softened Butter
- 125g Caster Sugar
- 2 Medium Eggs
- 125g Self Raising Flour
- 1/2 tsp Ground Cinnamon
- 5 tbsp Milk
- Preheat oven to 180°C (160°C fan) mark 4. Use softened butter to grease ramekin dishes and then spoon 1tbsp golden syrup into the bottom of each.
- Beat together the softened butter and caster sugar until smooth. Gradually beat in 2 medium eggs.
- Fold in self-raising flour, ground ginger and milk until smooth.
- Divide among the dishes. Cover each tin separately with foil and put into a roasting tin. Pour into the roasting tin enough boiling water to fill up to half of the dishes. Pop in oven for 25min or until a skewer inserted in the centre comes out clean.
- Leave to cool in tins for 5min then run a knife or spoon around inside of tins to loosen. Turn out on to plates and drizzle over extra syrup if you like. Serve immediately with custard or cream.
- These can be popped into the fridge and reheated in the microwave for about 30 seconds the next day.

It’s so hard to find the right balance between working from home and looking after the kids, especially when they’re on holidays. I must admit, the last 6 weeks have been great fun but i’ve struggled to keep up with work and am secretly looking forward to getting back to normality next week. I love the sound of these mini syrup sponges, especially as they’re so quick and easy to whip up! xx
