The Breadless Lunch Challenge with Bernard Matthews

Our latest Bernard Matthews family panel challenge was to create a breadless lunch. It had to be imaginative but you couldn’t use bread, pittas or wraps. So we racked our brains and I came up with a cute little idea for this challenge, a jacket potato man!

  1. 1 Jacket Potato per person
  2. Grated Cheese
  3. 1 Cherry Tomato per person
  4. Bernard Matthews Turkey Ham
  5. Bernard Matthews Turkey Chunks
  6. Butter
  7. Olive Oil
  1. Rub olive oil all over the jacket potato skins and place in a preheated oven (180F/Gas Mark 4). Cook for about 1hr 30mins. Skin should be crispy on the outside.
  2. Chop cherry tomatoes in half. Shred/cut the turkey ham into strips. Grate cheese. These will become the ingredients for decorating your potato face.
  3. Cut Jacket Potato length ways in half. Using a fork mash butter into the potato until soft and fluffy.
  4. Start by adding the Cherry Tomatoes as eyes, cheese as a beard and the turkey ham as hair. Use turkey chunks for the nose.
  5. Eat him and enjoy him. Get creative.

I know that lunch times are notoriously known for being something cold, but when you have a busy life to lead, running after various small humans and a household to maintain then you need to be able to create something for lunch that is healthy and very simple. I hate doing meals that require hours of preparation and time in the kitchen. A jacket potato can be put in the oven and left whilst you get on with the day and then requires a short amount of time to make a little more interesting for yourself and your children.

P1 and P2 loved the faces and I actually let them create their own ones which was really fun for them and saved even more time in the kitchen for me. P3 also loved the turkey ham although I don’t think she quite grasped the concept of creating a potato head face just yet.

And who can resist a happy potato face anyway?
